Taste Cafe in Aberystwyth does Paleo breakfasts. The meaty one consists of bacon, chicken, egg, kale, tomatoes, almonds, and pomegranate. It’s strange, but it does fill you up. The veggie one is poached egg, kale, tomatoes, almonds, pomegranate, mushrooms. Also strange but good.

Sweet potato and apple cinnamon X

x=fritters: I tried a recipe for sweet potato fritters. I like fritters but it’s a bit strange to eat that kind of fried food for breakfast so

x=loaf: I tried to adapt it the fritters recipe for the oven. Less success.

x=muffins: Sweet potato, apple and cinnamon muffins on the other hand are lush. I used this recipe which looked to me a bit odd – 3/4 cup mashed sweet potato? How many actual sweet potatoes is that? Do people actually have mashed sweet potato lying around as an ingredient? Enquiring minds want to know.  Turns out it’s the kind of recipe which is quite forgiving, and you can get away with zapping the sweet potatoes in the food processor then the microwave to make a kind of mash. I substituted stevia and an extra egg for the maple syrup because maple syrup feels like cheating to me.

I read about 165 paleo pancake recipes and found one which looked pretty cool. This was saved in the form of an open tab on my Android tablet. I started trying to recreate the recipe from memory, then realised I’d forgotten so I check the tablet to find that the tab had crashed. I then tried to find the link again, couldn’t, gave up and started following another recipe. At which point, I realised the new recipe had no almond flour in it so probably wouldn’t work as well with the half-started batter. When I realised I didn’t have coconut flour just desecrated coconut, I gave up with recipes completely and invented my own.

It was good though, so here it is – I think this might be the 166th recipe for paleo pancakes on the Internet.

  • 240ml (1 cup) ground almonds and dessicated coconut, about half and half
  • 4 medium eggs
  • 1 banana
  • 120ml (1/2 a cup) almond milk
  • Splash of cider vinegar
  • Splash of vanilla essence
  • Pinch of salt
  • Half a teaspoon baking powder

Wazz it all in the blender for ages. Fry it in coconut oil because you’re allowed to. Serve with whatever (lime juice and stevia worked for us).

I rather liked the pancakes. Although they were a bit decadent.

Chia pudding (chia seeds, coconut milk, fruit, soak overnight)

Omelette (mushroom, kale, courgette)

Poached egg on a bed of… rocket/salmon/kale/spinach/mushroom
